This Slow Cooker Carrot Cake Oatmeal combines two of my favorite things—carrot cake and oatmeal made in the slow cooker.

This Slow Cooker Carrot Cake Oatmeal has all the traditional flavors of carrot cake. Lots of fresh grated carrots, raisins, and warm spices create a warm, cozy bowl of oatmeal.

The night before I plan on serving this Slow Cooker Carrot Oatmeal, I add all the ingredients to the slow cooker. It is so easy. Just dump all the oatmeal ingredients into the slow cooker and cook on low overnight.
Breakfast will be waiting for you when you wake up in the morning!

I love topping the oatmeal with walnuts, some raisins, and a drizzle of maple syrup.


Slow Cooker Carrot Cake Oatmeal
Start your morning off with a nutritious bowl of Slow Cooker Carrot Cake Oatmeal. Wake up to a warm bowl of oatmeal in the morning!
Ingredients
- 1 Cup Steel Cut Oats
- 4 Cups Unsweetened Almond Milk
- 1 Cup Grated Carrots
- [1/2 Cup Golden Raisins
- 3-4 Tablespoons Pure Maple Syrup, or to taste
- 2 Tsp Cinnamon
- 2 Tsp Vanilla Extract
- 1/2 Tsp Sea Salt
- 1/4 Tsp Nutmeg
- 1/4 Tsp Ground Ginger
For Serving:
- Chopped Walnuts
- Golden Raisins
- Maple Syrup
Instructions
- Spray the slow cooker with non-stick spray or oil
- Add the oats, almond milk, carrots, raisins, maple syrup, cinnamon, salt, nutmeg, and ginger. Stir to combine.
- Cook on low.
- Serve with desired toppings.
