I love that this vegan oatmeal recipe combines two of my favorite things—carrot cake and oatmeal made in the slow cooker. You get all the amazing flavors of carrot cake without making an actual cake.

This crockpot carrot cake oatmeal has all the traditional flavors of carrot cake. Lots of fresh grated carrots, raisins, and warm spices create a warm, cozy bowl of oatmeal. The same ingredients that you would find in traditional carrot cake.
The night before I plan on serving this oatmeal with carrots and raisins, I add all the ingredients to the slow cooker.
It couldn't be easier. Just dump all the oatmeal ingredients into the slow cooker and cook on low overnight.
Breakfast will be waiting for you when you wake up in the morning!
You can also cook the oatmeal on high for 3-4 hours if you don't want to wait that long for the oatmeal to cook.
I love topping the oatmeal with walnuts, some raisins, and a drizzle of maple syrup.
how to store
Making oatmeal in the slow cooker is perfect for meal prepping. After the oatmeal is done cooking, let it cool. Transfer the cooled oatmeal to an air-tight container and store in the refrigerator.
The oatmeal will continue to thicken as it cools. To reheat, I like to add a splash of water or almond milk to help loosen up the oatmeal.
You can reheat the oatmeal in the microwave or on the stovetop.

Slow Cooker Carrot Cake Oatmeal
Start your morning off with a nutritious bowl of Slow Cooker Carrot Cake Oatmeal. Wake up to a warm bowl of oatmeal in the morning!
Ingredients
- 1 Cup Steel Cut Oats
- 4 Cups Unsweetened Almond Milk
- 1 Cup Grated Carrots
- ½ Cup Raisins
- 3-4 Tablespoons Pure Maple Syrup, or to taste
- 2 teaspoon Cinnamon
- 2 teaspoon Vanilla Extract
- ½ teaspoon Sea Salt
- ¼ teaspoon Nutmeg
- ¼ teaspoon Ground Ginger
For Serving:
- Chopped Walnuts
- Raisins
- Maple Syrup
Instructions
- Spray the slow cooker with non-stick spray or oil
- Add the oats, almond milk, carrots, raisins, maple syrup, cinnamon, salt, nutmeg, and ginger. Stir to combine.
- Cook on low for 6 to 7 hours or on high for 3-4 hours. If your slow cooker runs hot, it might not take as long.
- Serve with desired toppings.
Notes
