I first shared a bbq jackfruit recipe on the blog years ago and it's one of my most popular recipes on the blog. I wanted to create a specific blog post focused on how to make vegan pulled pork.

Since the jackfruit shreds and absorbs the different spices and flavorings, it makes a wonderful vegetarian pulled pork alternative.
The jackfruit has a texture that is similar to pulled pork when it is cooked, especially when it cooks under the broiler for a few minutes. It shreds just like pork would.

If you've never cooked with jackfruit before, this is a great recipe to try out.

First, you'll want to rinse the jackfruit and pat it dry. You want to make sure that the jackfruit is dry. This will help the spices stick to the jackfruit.

Before coating the jackfruit in the spice mix, you'll want to remove the seeds and remove the hard ends of the jackfruit.

Add the jackfruit to a large mixing bowl and add the bbq spices. Toss to evenly coat the jackfruit with the spices.

Once jackfruit is coated in the BBQ spice rub, it is added to the slow cooker.
Then pour in the BBQ sauce. You can use your favorite vegan-friendly store-bought BBQ sauce or homemade sauce.

The jackfruit will cook on low in the slow cooker for 5 hours.

After the jackfruit has cooked for about 5 hours, it is time to shred the jackfruit. I use a fork to shred the jackfruit. It should easily shred into pieces.
Let the jackfruit cook on low for another hour.

After the jackfruit is done cooking in the slow cooker, place the jackfruit on a parchment lined cookie sheet.
Broil the shredded jackfruit for a few minutes. Broiling the jackfruit helps to firm up the texture. Sometimes the jackfruit can be a little mushy.

This vegan pulled pork is so versatile. You can make vegan pulled pork tacos or sandwiches. Serve the BBQ jackfruit pulled pork on a tortilla or bun and top with coleslaw.
what to serve with vegan pulled pork
Serve any of your favorite BBQ side sides with the jackfruit pulled pork. To serve alongside the vegan pulled pork, I like to have potato salad, Black Bean, Corn and Avocado Salad or Mexican Cabbage and Avocado Salad.

Vegan Pulled Pork
Slow cooked jackfruit is a vegan spin on traditional pulled pork.
Ingredients
- 2- 20 Ounces Cans Young Jackfruit in brine {not syrup}, drained and rinsed
- 1 Tablespoon Brown Sugar
- 1 teaspoon Mexican Oregano
- 1 teaspoon Cumin
- 1 teaspoon Garlic Powder
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- ½ teaspoon Smoked Paprika
- ½ teaspoon Chili Powder
- 1 Cup Vegan-Friendly BBQ Sauce
Instructions
- Rinse and drain the jackfruit. Remove the seeds and cut off the tip of the jackfruit. This will remove the hard ends of the jackfruit.
- In a large mixing bowl add the jackfruit. Pat the jackfruit dry with a paper towel or dish towel.
- Add all the spices {brown sugar to chili powder} and stir to evenly coat the jackfruit with all the spices.
- Add the jackfruit to a 5 or 6 quart slow cooker. Pour the bbq sauce over the jackfruit and stir.
- Cook on low for 5 hours.
- After 5 hours, shred the jackfruit with a fork. Cook for an additional hour.
- After the jackfruit is done cooking in slow cooker, transfer the jackfruit to a parchment paper lined baking sheet.
- Broil the jackfruit for 5-10 minutes, or until the desired texture is reached.

Can I oven bake it ? I don’t have a slow cooker .

I haven't tried that method before, but you can also cook it on the stovetop. You'll just want to cook the jackfruit in some oil before adding the bbq sauce. Cook for 20-25 minutes and then shred the jackfruit.

Is there a way to cook it partially ahead of time / overnight when you need it in the am? Like…saving the last hour or the broiling time until morning?

I think that you could make it partially ahead of time and just finish cooking it when you want to serve it.
