Simple, cozy cabbage and pasta recipe with just a few simple ingredients.
During the winter months, I really enjoy cooking with cabbage for a few different reasons. Cabbage is in season during the fall and winter months and it's relatively inexpensive.
This simple pasta with cabbage recipe is a simple pasta recipe that is easy to make.
Many pasta dishes have a tomato based pasta sauce. If you aren't the biggest tomato fan or just looking for a different pasta to try—give this vegan cabbage and pasta a try.

For the pasta, you only need a few simple ingredients.
- Olive oil & Vegan Butter- To sauté the cabbage, use a combination of olive oil and vegan butter.
- Cabbage- Thinly sliced cabbage is the star of the pasta. You'll only about half of a cabbage. I like to slice the cabbage thin so it gets nice and caramelized.
- Onion- Thinly slice a yellow onion to sauté along with the cabbage.
- Smoked Paprika- After the cabbage has cooked down, add in some smoked paprika to add
- Papperdelle Pasta- I like using papperdelle but if you can't find it, you can use any long pasta shape. Fettuccini would be good. Trader Joe's carries a vegan papperdelle pasta. Just be sure to double check that the pasta is vegan because come kind contain eggs.
Cooking Instructions
- Start by bringing a large pot of salted water to a boil. Once the water is boiling, cook the pasta according to the package instructions
- While you are waiting for the pasta is cook, in a large skillet heat the oil and vegan butter.
- Add the cabbage and onion, and season with a pinch of salt. Cook until the cabbage begins to wilt and caramelize, about 10-15 minutes.
- Stir in the parsley and add the paprika and cook for another minute or two.
- Add the remaining butter and stir to combine.
- Once the pasta is cooked, add it to the cooked cabbage along with the reserved pasta water; stir, and add salt and pepper to taste.

Ingredients
- 8 ounces Papperdelle Pasta
- 2 tablespoons olive oil
- 4 tablespoons vegan butter, divided
- ½ head green cabbage cored, and thinly sliced
- 1 yellow onion, thinly sliced
- 1 teaspoon smoked paprika
- ½ cup flat-leaf parsley, chopped
- salt and freshly ground pepper
Instructions
- Bring a large pot of salted water to a boil. Once the water is boiling, cook the pasta according to the package instructions. Reserve ½ cup of pasta water, then drain the pasta.
- Meanwhile, place a large skillet over medium-high heat. Add 2 tablespoons of olive oil and 2 tablespoons of butter and allow to melt.
- Add the cabbage and onion, and season with a pinch of salt. Cook, stirring occasionally, until the cabbage begins to caramelize, about 10 minutes.
- Stir in the parsley and add the paprika and cook for another minute or two.
- Add the remaining butter and stir to combine.
- Add the pasta and reserved pasta water to the pan and cook for another minute.
- Taste and adjust the seasoning, adding salt and pepper as needed.
- Remove from the heat and serve.
Notes
I find the papperdelle pasta at Trader Joe's. Some papperdelle pasta contains eggs, so be sure to check the ingredient list.
