Ingredients
Vegan Mayonnaise- for the base of the salad dressing, we need a vegan mayo. I really like using vegenaise.
Maple Syrup- Just a little bit of pure maple syrup is needed to balance out the salad dressing.
Almond Milk- To help loosen up the dressing just a little bit of almond milk is needed. You could also use water in place of the almond milk.
Lemon Juice- A squeeze of fresh lemon juice adds a brightness to to the salad.
Salt- The salt helps to balance out the flavors in the dressing.
Shredded Carrots- I like to grate the carrots with a box grater. I really like the texture of the carrots when they are grated.
Raisins- The natural sweetness of the raisins compliments the crunchy carrots. You could also use golden carrots if that's what you like.
