Easy, budget-friendly Refried Beans and Rice is a delicious, filling easy plant-based dinner.
I think that I could eat Rice and beans everyday. There are so many different rice and bean combinations that you can have. From black beans and rice to refried pinto. beans with white rice, there are endless possibilities.
If you are looking to incorporate more plant-based protein into your diet, beans are a great way to go. Beans are not only affordable they are a great source of protein.
This rice and bean bowl features canned pinto beans cooked with canned diced green chiles.
The addition of the diced green chiles is a great way to add a little kick to basic canned beans.
What I love most about this recipe is that is recipe is very pantry-friendly. Keeping a couple cans of beans in your pantry comes in handy when you are looking for a quick, protein-packed plant-based meal.

For this pantry-friendly refried bean recipe you'll need the following ingredients:
- avocado oil
- yellow onion
- 2 canned pinto beans
- canned diced green chiles
- 2 limes
- 3 cups cooked white rice
- ½ bunch green onions, trimmed and sliced
- fresh cilantro, for garnish
- avocado slices, for serving
recipe instructions
First, you'll want to make your white rice according to the package instructions.
Start by sautéing the chopped onion in avocado oil. Next, add in the chili powder and cumin.
To the sautéed onion, add two cans of rinsed and drained pinto beans and diced green chiles. Cook for 8-10 minutes. Then mash the beans until desired texture is reached.
Turn off the heat and add the juice of a lime. Serve the refried pinto beans with chiles with cooked white rice, fresh cilantro and avocado slices.
I could eat some sort of variation of rice and beans everyday and this is one of my new favorite ways to make rice and beans.
This beans and rice recipe is also budget-friendly and inexpensive to make. If avocados are priced too high, just skip adding it. It'll still be great.

Refried Beans with Rice
Budget-friendly, plant-based dinner featuring pinto beans cooked with diced green chiles served over white rice.
Ingredients
- 1 Tablespoon Avocado Oil
- 1 Medium Yellow Onion, diced
- 1 Teaspoon Chili Powder
- 1 Teaspoon Cumin
- 2- 15 ounce cans pinto beans rinsed and drained
- 1- 4 ounce can diced green chiles
- Juice of one lime
For Serving:
- 3 cups cooked white rice
- ½ bunch green onions, trimmed and sliced
- Fresh cilantro, for garnish
- One Large Avocado, sliced
Instructions
- In a large skillet heat the avocado oil over medium heat. Add the diced onion and cook until soft and translucent, about 5-7 minutes.
- Add the chili powder and cumin and cook for another minute.
- Stir in the green chiles and beans. Stir and continue cooking to heat through, about 8-10 minutes.
- Turn off the heat and mash with a fork or a potato masher until mashed.
- Stir in the juice of 1 lime and season with salt.
- To make a bowl, fill one side of a serving bowl or plate with refried beans. Fill the other side with cooked rice.
- Top with fresh cilantro, avocado and green onions.
