If you have followed me for awhile, you will know that I absolutely love the soy chorizo from Trader Joe's. You will always find one or two things of soy chorizo in my fridge.
Whether your are vegetarian or an omnivore, soy chorizo is a crowd pleaser. I know a lot of omnivores who love thy soyrizo from Trader Joe's.

This vegetarian soyrizo chili is packed with protein too! The vegan chorizo and black beans add a great source of protein to the chili.
Chili Ingredients
For the vegan soyrizo chili recipe you'll need the following ingredients:
- vegan chorizo- I really like to vegan soyrizo from Trader Joe's. If you don't have a trader joe's near you, there are a few other brands of vegan chorizo that are great.
- aromatics- For the aromatics, I like to sauté a bell pepper and onion until soft. This adds a really nice depth of flavor to the chili.
- spices- For a flavorful chili, spices are a must. I love adding smoky paprika, spicy chili powder and earthy cumin to chili. the spics add a really nice depth of flavor to the chili.
- tomatoes- since tomatoes are only in season for a few months out of the year, I like to add canned tomatoes to my chili. I really like the addition of tomatoes in chili.
- sweet potatoes- One of my favorite ingredients to cook with would have to be sweet potatoes. Adding diced sweet potatoes to chili adds a hearty element to the chili. Sweet potatoes and the vegan chorizo pair really nicely together as well.

soyrizo chili
Hearty, smokey vegan chili made with vegan chorizo and sweet potatoes.
Ingredients
- 1 tablespoon avocado oil
- 1 medium yellow onion, diced
- 1 red bell pepper, chopped
- 1 package vegan chorizo, removed from packaging and casing
- 3 cloves garlic, chopped
- 1 tablespoon ancho chile powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon dried oregano
- Two 14.5-ounce cans fire roasted diced tomatoes
- 4 cups vegetable broth
- 2 cups diced and peeled sweet potatoes
For Serving
- Diced Avocado
- Tortilla Chips
- Chopped Cilantro
- Sliced Green Onions
Instructions
- Heat the oil in a large Dutch oven over medium heat. Add the onion and bell pepper and cook until they begin to soften, 4 to 6 minutes. Add the garlic and cook for 1 minute.
- Crumble in the chorizo. Cook, breaking up the chorizo with a wooden spoon, until browned, about 3-5 minutes, stirring often.
- Add the ancho powder, cumin, smoked paprika and oregano. Cook and stir to coat the chorizo and vegetables in the spices, about 1 minute.
- Add the tomatoes and broth. Bring to a simmer over medium-low heat, then stir in the diced sweet potatoes.
- Bring to a boil snd then reduce to a simmer, uncovered, until the chili is thick and flavorful and the veggies are tender, 30 to 45 minutes.
- Serve the chili with favorite toppings.
