Do you struggle with what to have for breakfast in the mornings? Or do you find that you don’t have time to make a bowl of oatmeal in the morning? By making your morning oatmeal in the slow cooker the night before, you’ll have a healthy and delicious breakfast waiting for you in the morning. If you like to meal prep on the weekends, this Slow Cooker Banana Nut Oatmeal is a great make-ahead breakfast to add your meal plan.
The slow cooker does all the work for this recipe. I do recommend spraying your slow cooker with a non-stick oil spray before adding the ingredients. This will make cleaning the slow cooker a little easier. For a gluten-free version, simple use gluten-free steel-cut oats. The oatmeal tastes very similar to banana bread, but much healthier! The steel cut oats are flavored with vanilla extract, lots of cinnamon and nutmeg. For a little sweetness, I added a little Michigan Pure Maple Syrup.
When serving this Slow Cooker Banana Nut Oatmeal, I like to top the oatmeal with fresh banana slices, walnuts, and a drizzle of maple syrup. This oatmeal is definitely a delicious way to start your morning. If you are making the oatmeal ahead of time to enjoy for a quick and easy breakfast, simple warm the oatmeal with a few tablespoons milk or water.
