If you like to meal prep on the weekends, this Slow Cooker Banana Nut Oatmeal is a great make-ahead breakfast to add your meal plan.
The slow cooker does all the work for this recipe. I do recommend spraying your slow cooker with a non-stick oil spray before adding the ingredients. This will make cleaning the slow cooker a little easier. For a gluten-free version, simple use gluten-free steel-cut oats. The oatmeal tastes very similar to banana bread, but much healthier! The steel cut oats are flavored with vanilla extract, lots of cinnamon and nutmeg. For a little sweetness, I added a little Michigan Pure Maple Syrup.
When serving this Slow Cooker Banana Nut Oatmeal, I like to top the oatmeal with fresh banana slices, walnuts, and a drizzle of maple syrup. This oatmeal is definitely a delicious way to start your morning. If you are making the oatmeal ahead of time to enjoy for a quick and easy breakfast, simple warm the oatmeal with a few tablespoons milk or water.

Slow Cooker Banana Nut Oatmeal

Ingredients
- 1 Cup Steel Cut Oats, GF if necessary
- 2 Medium Ripe Bananas, mashed
- ⅓ Cup Walnuts, chopped
- 2 Cups Non-Dairy Milk {I used Soy}
- 2 Cups Water
- 1-2 Tablespoons Pure Maple Syrup, or to taste
- 2 teaspoon Vanilla Extract
- 2 teaspoon Cinnamon
- ½ teaspoon Nutmeg
- Pinch of Sea Salt
For Serving:
- Banana Slices, Chopped Walnuts, Drizzle of Maple Syrup
Instructions
- First spray the inside of a 4 quart slow cooker with non-stick spray. This will help with the clean up process.
- To the slow cooker add the steel-cut oats, bananas, walnuts, milk, water, maple syrup, vanilla, cinnamon, nutmeg, and salt.
- Stir everything, making sure that everything is combined. Cook on low for 6-8 hours.
- Serve warm with any of the optional serving toppings.
- If you are reheating the oatmeal, simply add a few tablespoons of milk or water to the oats when reheating them.
