My toddler loves broccoli. He even loves snacking on broccoli raw. So I am always looking for dinner recipes using broccoli since I know it's something that he will eat.

This pasta recipe with broccoli is perfect for a busy weeknight meal. The best part is that you only need one pot to cook the pasta.
Pasta Ingredients
For this pasta with broccoli recipe, you'll need the following ingredients:
- Bow Tie Pasta- You can really use any pasta shape that you would like, but I think that using bow tie pasta is really fun, especially for kids. Bow tie pasta is also known as farfalle.
- Olive Oil- I like to use part olive oil to sauté the aromatics.
- Butter- Equal parts butter and olive oil are use for the base of the sauce. I like using the combination of olive oil and butter to make a balance sauce.
- Lemon- Broccoli and lemon go really well together. To maximize the lemon flavor, use both the zest and juice of one lemon.
- Garlic- Fresh garlic gets sautéed in the olive oil and butter for an aromatic pasta.
- Parmesan- For a little cheesiness, I like to add a little bit of vegan Parmesan to the pasta and broccoli. This is definitely optional and you can leave it out.

how to make the recipe
Bring a large pot of salted water to a boil. Once the water is boiling, add the broccoli and cook for 3 minutes. Use a slotted spoon to remove the broccoli and transfer to a large bowl.

In the same pot that you cooked the broccoli, add the pasta and cook until al dente according to the package directions. Drain and add to the broccoli.
While the pasta is cooking, in a small saucepan heat the olive oil and butter over medium low heat. Add the garlic and lemon zest and sauté for 1 minute.
Turn off the heat and add salt and pepper, and lemon juice. Pour this over the broccoli and pasta. Toss well. Season to taste. Sprinkle the Parmesan cheese over the pasta.
