Canned chickpeas are simmered with BBQ sauce and canned crushed pineapple. You can use your favorite homemade or store-bought BBQ sauce for this recipe.
The addition of crushed pineapple adds a little sweetness to the chickpeas. You get a little bit sweet and spicy in the chickpea sandwiches.

To complete the Vegan Chickpea Sandwiches, I like to top them with my easy cilantro lime coleslaw recipe.

The flavors of the cilantro lime slaw brighten up the sweet, spicy BBQ Pineapple Chickpea Sandwiches.

how to make the BBQ chickpeas
Add the canned chickpeas, crushed pineapple, and BBQ sauce to a medium skillet.
Bring the mixture to a simmer and cook for 10 minutes.

Use the back of a fork or masher to mash part of the chickpeas. I like the texture of mashing at least half the chickpeas. Mashing a portion of the chickpeas helps the chickpeas hold on the sandwich bun better.
After mashing the chickpeas, cook for another 10-15 minutes.
While the chickpeas are cooking, you can make the cilantro lime slaw.

Serve the BBQ Pineapple Chickpeas on sandwich buns and top with coleslaw.
