My family loves carrots in any form. From raw carrots with hummus to roasted carrots, there are so many great ways to enjoy carrots.
Carrots are a great vegetable to have on hand. They are super inexpensive, store along time in the fridge and can be used in so many different recipes.
These dairy-free slow cooker glazed carrots are the perfect side dish for for Thanksgiving dinner or a weeknight dinner.
When it comes to the holidays, I am always looking for recipes that I can make in the slow cooker. Making holiday side dishes in the slow cooker is great because it frees up oven and stove space.
Ingredients needed:
- two pounds glazed carrots
- ¼ cup vegan butter
- ⅓ cup light brown sugar
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ½ teaspoon salt
- minced fresh parsley for garnish
how to make glazed carrots
To the slow cooker, add the sliced carrots, brown sugar, vegan butter, cinnamon, nutmeg and salt.
Cook on high for 3 hours or until the carrots are tender.
To help thicken up the glaze, after the carrots are tender, remove the lid. Cook for an additional 15 minutes until the glaze has thickened., This step is completley optional.
I prefer to do this step because I prefer when the glaze is a little thicker.
For a pop of color and freshness, I like to garnish the glazed carrots with a little chopped fresh parsley.

Vegan Glazed Carrots

Ingredients
- 2 pounds carrots peeled and sliced into ½ inch pieces
- ¼ cup vegan butter, diced
- ⅓ cup light brown sugar
- ½ teaspoon salt
- ½ teaspoon cinnamon
- ⅛ teaspoon nutmeg
- 1-2 tablespoons chopped parsley
Instructions
- Place the carrots in a slow cooker.
- Add butter, brown sugar, salt, cinnamon and nutmeg to the carrots.
- Stir and toss to coat the ingredients together.
- Cook on HIGH for 3 hours or until carrots are tender.
- To thicken the glaze, remove the cover and cook on high for an additional 15 minutes.
- Sprinkle with parsley and serve.
