Blondies are a variety of dessert bar that resembles a chocolate brownie, but instead of using cocoa, blondies have vanilla and brown sugar. Blondies are sometimes called a blonde brownie. Both are delicious, but these vegan blondies are extra gooey, rich and chewy.
Blondies have notes of caramel and butterscotch. The butterscotch flavor profile gives blondies there unique flavor.

Blondies typical have butter and eggs, but it is easy to make blondies vegan.
For the egg and binder, this blondie recipes uses pureed tofu and plant milk. I really like using the tofu for the egg in blondies. It helps to create a very chewy blondie.
Instead of using butter, I like to use avocado oil. The combination of the pureed tofu and oil creates a buttery, rich blondie.
Normally white chocolate chips have dairy, but now there are so many great non-dairy white chocolate chips available. You can find them online or at many grocery stores.
And if you can't find any vegan white chocolate chips, you can always use regular chocolate chips. The blondies will still be delish.

Vegan Blondies
Rich, decadent Vegan Blondies are a chewy dessert bar that are loaded with white chocolate chips.
Ingredients
- 3 ounces soft silken tofu, like Mori-Nu {¼ of the package}
- ¼ Cup Plant Milk
- ⅓ Cup Avocado Oil
- ½ Cup Brown Sugar
- ½ Cup Cane Sugar
- 1 teaspoon Vanilla Extract
- 1 ½ Cups All Purpose Flour
- ½ teaspoon Baking Soda
- ½ teaspoon Salt
- ¼ teaspoon Baking Powder
- ½ Cup Vegan White Chocolate Chips
Instructions
- Preheat the oven to 325 F. Line an 8 by 8 baking dish with parchment paper.
- Puree the tofu and non-dairy milk until smooth. I like to use a mini food processor.
- Transfer the mixture to mixing bowl. Add the avocado oil and whisk until combined.
- Add the brown sugar and can sugar. Whisk until combined.
- Add the vanilla and whisk.
- Sift in the flour, baking soda, salt, and baking powder.
- Fold in vegan white chocolate chips.
- Transfer the batter to the parchment lined dish.
- Bake for 27-30 minutes. until the sides are brown.
- Let the blondies cool at least 30 minutes before serving.
