It doesn't have to be your birthday to enjoy these birthday inspired Vegan Funfetti Blondies!

I'm so excited to share this recipe for Vegan Funfetti Blondies with you! These easy blondies are chewy, scrumptious and dairy-free!
These funfetti blondies are easy to make and kids will love them. Adults will too!

How to make the dessert
Start by pureeing tofu and plant milk. I use my mini KitchenAid Food Processor and it works great for small quantities like this.
To keep the blondies vegan, the tofu acts as a binding agent. Just like eggs would in a recipe.
Next, whisk the tofu and plant-milk puree with avocado oil. I really like baking with avocado oil because it is a neutral cooking oil and healthier than canola oil.

Now add the brown sugar and cane sugar; whisk until combined. Add in the vanilla and combine.
After the dry ingredients have been whisked together, sift in the dry ingredients.
Use a rubber spatula to fold in the dry ingredients.

Now it's the best part! Time to add the sprinkles. A lot of sprinkles aren't vegan, but there are a few brands out there.
I really like the 365 sprinkles from Whole Foods.
I like to top the blondies with extra sprinkles on top before baking in the oven.
can they be made ahead of time?
Yes! I actually think the blondies taste even better the next day.

They also freeze really well. Just cut the blondies into pieces and put into an air-tight container.

If you froze the blondies, just take out them out a few hours before you want to serve them.

Vegan Funfetti Blondies

Ingredients
- 3 ounces soft silken tofu, like Mori-No {¼ of the package}
- ¼ Cup Plant Milk
- ⅓ Cup Avocado Oil
- ½ Cup Brown Sugar
- ½ Cup Cane Sugar
- 1 teaspoon Vanilla Extract
- 1 ½ Cups All Purpose Flour
- ½ teaspoon Baking Soda
- ½ teaspoon Salt
- ¼ teaspoon Baking Powder
- Vegan Sprinkles
Instructions
- Preheat the oven to 325 F. Line an 8 by 8 baking dish with parchment paper.
- Puree the tofu and non-dairy milk until smooth. I like to use a mini food processor
- Transfer the mixture to mixing bowl. Add the avocado oil and whisk until combined.
- Add the brown sugar and can sugar. Whisk until combined.
- Add the vanilla and whisk.
- Sift in the flour, baking soda, salt, and baking powder.
- Fold in vegan sprinkles. Add as much as you'd like!
- Transfer the batter to the parchment lined dish. Add more sprinkles to the top of the blondies.
- Bake for 27-30 minutes. until the sides are brown.
- Let the blondies cool at least 30 minutes before serving.
