Cilantro Lime Rice is an easy side dish or perfect for your burrito bowls!
I will have to admit that we eat a lot of rice in our family. Rice is my go-to side dish when I am looking for something that is quick and easy. I have shared a few of my favorite rice recipes on the blog: Mexican Green Rice, Mexican Green Rice with Fideo, Authentic Mexican Rice, Cheesy Mexican Rice Casserole, and Chipotle White Rice.
Rice is a staple in Mexican cuisine. It is easy to make and very affordable if you are watching your budget. It is so versatile and you can change it up by adding different seasonings. This rice is perfect for taco night or in your burrito bowls for lunch.
This Cilantro Lime Rice starts like any other Mexican rice recipes. The rice is toasted in oil before the liquid is added. For this cilantro lime version, lime zest is added to the liquid. The zest infuses into the rice as it cooks. After the rice is cooked, lots of fresh cilantro and lime juice are added. Cilantro and lime juice are two of my favorite ingredients and really elevate the rice. I like use both the cilantro leaves and stems. The stems have so much flavor!

Cilantro Lime Rice
Rice is infused with lime zest and lots of fresh cilantro. An easy side dish or perfect for your burrito bowls!
Ingredients
- 1 Tablespoon Vegetable Oil
- 1 Cup Extra Long Grain White Rice
- 2 Cups Water
- 1 teaspoon Sea Salt
- Zest of 1 Lime
- ½-3/4 Cup Chopped Fresh Cilantro
- 2 Tablespoons Lime Juice
Instructions
- Heat the vegetable oil in a medium saucepan over medium heat. Once the oil is hot, add in the rice and stir, making sure to coat all the rice in the oil. Toast the rice, stirring often, for 3-4 minutes, just until the rice starts to turn a milky white color.
- Pour in the water, add the salt and lime zest. Bring to a boil, stir, then reduce heat to low. Cover and cook for 15 minutes, or until the rice is done.
- Turn off the heat and let the rice sit for a few minutes. Fluff the rice with a fork. Add in the chopped cilantro and lime juice. Stir.
