Black Beans get a tropical twist with the addition of coconut water and fresh lime juice.
The winter is pretty gloomy here in Michigan and it is a rare sight to see the sun. Last week the sun came out for the first time in awhile and it felt amazing. It's easy forget what the sun feels like after not seeing it in weeks. The little bit of sunshine left me dreaming of taking a tropical vacation. Since that isn't in the cards for me right now, I am settling for foods that have a tropical feel like these Tropical Coconut Lime Black Beans.
This simple black beans dish gets a tropical twist with coconut water and fresh lime juice. The black beans get the coconut flavor from two sources: coconut oil and coconut water.
To balance out the natural sweetness of the coconut water, a jalapeño adds just the right amount of kick to cut the sweetness. After the beans are done, fresh lime juice and chopped cilantro is added for brightness.
I like to serve these Tropical Coconut Lime Black Beans alongside the Cilantro Lime Rice that I shared last week. The two pair beautifully together and make the perfect base for a burrito bowl.
Tropical Coconut Lime Black Beans
Coconut and Lime juice gives simple black beans a tropical twist. An easy side dish dish or perfect for serving in a burrito bowl.
Ingredients
- 1 Tablespoon Coconut Oil
- ½ Medium Red Onion, diced
- 1 Jalapeno, minced
- 1 Garlic Clove, minced
- 2 15 Ounce cans Black Beans, rinsed and drained
- ¾-1 Cup Coconut Water {unflavored}
- Salt and Pepper to taste
- 2 Tablespoons Lime Juice
- ¼ Cup Chopped Cilantro
Instructions
- In a large deep skillet or dutch oven, heat the oil over medium heat. Add the onion and jalapeno and saute until softened, about 4-5 minutes. Add the garlic and cook for 1 minute.
- Add the black beans, ¾ cup of the coconut water and salt and pepper to taste.
- Bring to a boil then reduce heat to a low simmer. Cook for 10-15 minutes, until most of the liquid has been absorbed. If all the liquid has evaporated, add an additional ¼ cup.
- Turn off the heat and add the lime juice and chopped cilantro. Taste and adjust seasonings if needed.
