Over the past few months, rice has become my go-to side dish. I will admit that Mexican Red Rice is my favorite rice dish; however, Mexican Green Rice {Arroz Verde} is definitely right up there with the red version. Only a couple of ingredients are needed to make a delicious and flavorful rice.
For this Green Rice, I like to puree a mixture of cilantro, onion, garlic, and a poblano pepper. These 4 ingredients go perfect together. The best part about this rice is that you don't have to roast and peel the poblano pepper before using. Just chop it up and add it to the blender with the other ingredients.
As always with any Mexican rice recipe, I soak the rice in hot water for 5-10 minutes then rinse the rice with cold water. This step helps to ensure that the rice will turn out perfectly every time.

Mexican Green Rice {Arroz Verde}
A great side dish to any Mexican or Tex-Mex entree! Only a few ingredients are needed to great a flavorful side dish.
Ingredients
- 1 Cup Extra-Long Grain Rice
- Hot Water
- 1 Poblano Pepper, seeded + veins removed, and roughly chopped
- ½ Cup Cilantro, roughly chopped
- ¼ White Onion
- 2 Garlic Cloves, peeled
- ½-3/4 teaspoon Sea Salt, or to taste
- Up to 2 cups water
- 1 Tablespoon Olive Oil
Instructions
- Soak the rice in hot water for 5-10 minutes. Rinse the rice under cold water. Drain and set aside
- In a blender, puree the chopped poblano pepper, cilantro, onion, garlic, salt, and add about 1 cup of water. Blend until smooth.
- Pour the pureed mixture into a liquid measuring cup. Add enough water to make 2 cups of liquid in total.
- In a large skillet with a clear lid, heat the olive oil over medium high heat. Add the rice and cook, making sure to stir often. Cook for 4-5 minutes, or until the rice turns a milky white color.
- Stir in the puree mixture. Bring to a boil. Stir and cover. Reduce the heat to the very lowest setting. Cook the rice for 15 minutes, or until all of the liquid has been absorbed.
- Turn off the heat and let the rice rest for 5 minutes. Fluff the rice with a fork. Serve!
