Last week I picked up a half bushel of peaches at one of our local orchards. You might be thinking that is quite a lot of peaches and you would be right. I wanted to take full advantage of the short peach season here in Michigan. Some years the peaches aren't that easy to come by if we have a harsh Winter. One year I remember going to a local Peach Festival over Labor Day weekend and the majority of the peaches had to be shipped in because most of the crop had been destroyed. So sad!
Luckily this was not the case this year because there was a plethora of peaches at the local markets and orchards. Let's just say that I took full advantage of peach season.
When I started brainstorming recipe ideas, I really wanted to share a light and refreshing peach recipe with you. The first idea that popped into my head was to make a fresh salsa. There is usually always some type of salsa in the fridge at our house, but typically it is salsa roja or salsa verde. Every now and again it is fun to change up your everyday salsa for some refreshing peach salsa!
This peach salsa would be perfect on tacos, in salads, served with chips, or eating straight out of the bowl. It's light and refreshing. If you love eating lots of salsa and chips like me, go ahead and make a double batch. You won't regret it one bit!

Fresh Peach Salsa
Fresh and light salsa featuring ripe peaches. Perfect for tacos, but also makes for amazing chips and salsa!
Ingredients
- 2 Cups Peaches, peeled & diced small {about 4-6 medium peaches}
- ½ Large Red Bell Pepper, finely chopped
- 1 Jalapeño, seeds removed + finely minced
- ½ Small Red Onion, finely chopped
- ¼ Cup Cilantro, chopped
- ½-1 Large Lime, juiced
- ⅛-1/4 teaspoon Salt, or to taste
Instructions
- In a large bowl combine prepared peaches, red bell pepper, jalapeño, onion, cilantro and lime juice. Mix well. Add the salt. Taste and add more lime juice if needed.
- You can serve right away or let the salsa sit for 10-15 for the flavors to develop.
