I’m pretty predictable when it comes to the food in my fridge. I always like to keep a few staples on hand. Two ingredients that you’ll always find are avocados and tomatillos. The two ingredients are so versatile and they each have many different uses. One of my favorite salsa recipes features avocados and tomatillos and it is so delicious. It’s tart from the tomatillos and the avocado makes it creamy. It pairs beautifully with tacos. After you make this salsa, you’ll see why this salsa is very popular in Mexico City. The creamy, bright salsa makes the perfect condiment to your favorite tacos. Have you had tomatillos raw before? If not, you are in for a real treat. When tomatillos are left raw it brings out their natural tartness; a perfect pairing with the creamy, ripe avocado and spicy jalapeño.

This tomatillo + avocado salsa makes the perfect condiment to your favorite tacos. Unlike most guacamoles, this taqueria salsa can be made in advance. It doesn’t oxidize as quickly because of the acidic tomatillos and lime juice. They help to keep this salsa bright green. Just store in the fridge until serving. I think it even taste better after it has chilled for an hour or so.

- 5 Tomatillos, husked removed and cleaned
- 1-2 Jalapeños, use just 1 for a milder salsa
- 1 Large Avocado
- 1/2 Cup Cilantro
- 1/4 Slice of White Onion
- 1 Garlic Clove
- 1 Tsp Salt
- 1 Tablespoon Lime Juice, plus more if need
- Dice the cleaned tomatillos. Add the the blender along with all the other ingredients. Blend until smooth and creamy.
- Taste and add more salt or lime juice to your preferred taste.
- Serve right away or store in the fridge until serving.
