Oberon Orange Cupcakes are the perfect cupcake for spring and summer entertaining!
I am so excited to share this cupcake recipe with you today! I have been testing this recipe over the past week, making sure it was perfect before sharing the recipe with you.
These cupcakes are made with a secret ingredient—Bell's Oberon. If you aren't big into craft beer, you might have heard of Oberon—a wheat ale made with just four ingredients. Every March Oberon is officially released and people go crazy for it. Oberon release day is the unofficial start of spring here in Michigan! Bell's Eccentric Cafe in Kalamazoo has a big party on release day.
I love cooking and baking with beer. If you haven't tried baking with beer before, I highly recommend giving it a try! Baking with beer creates a light, tender baked good. I wanted to create a cupcake recipe using the Oberon as the liquid. The results created the most tender muffin.
Oberon is often served with an orange slice, which inspired me to add fresh orange juice and orange extract to the cupcake batter. Oberon has citrus notes from the hops and the addition of the orange juice and zest highlights the flavor profile of the beer.
I tested this cupcake recipe 5 times making sure to get the recipe just right. I wanted to make sure that I got the right ratio of beer to orange juice. The Oberon really makes these cupcakes light and fluffy.
After the cupcakes have baked and cooled, it's time to frost the cupcakes! For the frosting I wanted something that would compliment the cupcake. Instead of using butter or vegetable shortening, I like using melted coconut oil as the base. The creates a light, fluffy frosting. To compliment the orange flavor of the cupcake, I like to add orange juice to the frosting. This just helps to tie the flavors together. Making these cupcakes extra delicious!

Oberon Orange Cupcakes
Oberon Orange Cupcakes are the perfect cupcake for spring and summer entertaining!
Ingredients
- ⅓ Cup Neutral Vegetable Oil
- ¾ Cup Cane Sugar
- 1 Cup Oberon Beer, Cold
- ¼ Cup Orange Juice
- 1 Tablespoon Orange Zest
- 1 teaspoon Orange Extract
- 1 teaspoon Vanilla Extract
- 1 ⅓ Cup All Purpose Flour
- 1 Teaspoon Baking Powder
- ½ Teaspoon Baking Soda
- ½ Teaspoon Salt
For the frosting:
- 3 Cups Powdered Sugar
- ½ Cup Coconut Oil, melted and cooled
- ¼ Cup Orange Juice
- ½ Teaspoon Vanilla Extract
- Pinch of Salt
Instructions
- Preheat the oven to 350 F. Line a cupcake tin with cupcake liners. Set aside.
- In a large bowl, beat together the oil and sugar. Add the Oberon, orange juice, orange zest, orange and vanilla extracts. Beat until combined.
- Sift in the flour, baking powder, baking soda, and salt. Mix just until the ingredients are combined.
- Pour the batter in the lined cupcake tin. Bake for 18-22 minutes, or until a tester comes out clean. Remove from the oven, and when the pan in cool enough to handle, transfer the cupcakes to a cooling rack to cool completely.
- Let the cupcakes cool before frosting them.
- Once the cupcakes have cooled, making the frosting.
For the frosting:
- In a mixing bowl, whisk together the powdered sugar, melted coconut oil, orange juice, vanilla, and salt. Refrigerate for 30 minutes.
- Use a stand mixer or hand mixer on medium-high to whip the frosting until it is light and fluffy. Frost the cupcakes using a butter knife, or pipe on the frost frosting using a piping bag.

For the frosting: 1/2 of what of coconut oil? Cup? Tablespoon? LOL
Anyways, I improvised on that measurement and made these.... they are INCREDIBLE! They turned out amazing! So delicate and flavorful and fluffy. I just couldn't get the frosting to turn out and set like yours. It was quite liquidy even after cornstarch and refrigerating overnight. Still 10/10!!! The frosting calls for 1/2 cup of the melted and coconut oil!

Neato, the only thing I'd suggest is using Michigan beet sugar instead of cane sugar.
