Sopa de Fideo is a traditional Mexican recipe that is very popular and very kid-friendly. It is a tomato based soup with fideo noodles, or vermicelli noodles.
Fideo pasta can be found at your local Latin grocery store or well stocked grocery stores. It is also really budget friendly. I have found the bags of fideo pasta for just .33 cents! I usually like to keep a few bags of Fideo in my pantry, so I can make Sopa de Fideo when we are running low on groceries or just need a quick meal for dinner.
Hector grew up eating this soup. His Mom Adela would make him Sopa de Fideo at least once a week. Eating Sopa de Fideo brings back happy childhood memories for Hector. I love that food can transport you back to another time or relive certain memories.

Sopa de Fideo {Mexican Noodle Soup}
Sopa de Fideo is a traditional Mexican noodle soup that is perfect comfort food. Easy to make + also budget-friendly!
Ingredients
- 6 Roma Tomatoes
- ¼ White Onion, chopped
- 2 Garlic Cloves
- 1 ½-2 Tablespoons Vegetable Oil
- 1 7 ounce {220 G} Package Fideo Pasta
- 1 ½-2 teaspoon Sea Salt, or to taste
- 4 Cups Water or Vegetable Broth
Instructions
- In a saucepan, add the tomatoes and cover with water. Bring to a slow boil over medium to medium high heat, then reduce heat to a simmer. Cook the tomatoes until the skins start to break open, about 5-7 minutes. Using a slotted spoon, transfer the tomatoes to a blender. If the tomatoes aren't very liquidly, add in a few tablespoons of the cooking liquid. Add in the onion and garlic cloves. Blend until smooth. Set aside.
- In a large soup pot or heavy pot, heat the oil over medium heat. Add the fideo. Stir the pasta continuously until it turns a light golden brown, about 5 minutes. Be careful not to burn the pasta.
- Stir in the tomato puree. Be careful and stand back because it can splatter. Cook for 2-3 minutes, occasionally stir the pasta. Add the water and salt. Bring to a low boil and then reduce heat to low. Cover and cook 10 minutes, or until the pasta is cooked.
Notes
The noodles will thicken up as it sits. Just add in more water if the soup gets too thick!
