Who's ready for warmer weather and days spent at the beach? I am definitely looking forward to spending the weekends at the lake enjoy the sunshine. This summer you'll find me at Lake Michigan on the beach sipping on this refreshing beverage: Pina Colada Agua Freca.
This creamy, refreshing drink is so simple to make. This agua fresca has all the flavors of a colada and it is so refreshing; perfect for a hot day. I kept this drink non-alcoholic, but feel free to add in a splash of rum. The drink starts with a ripe pineapple. If you pineapple is sweet enough, you won't even need to add sugar. If your pineapple isn't that sweet, add agave nectar to taste. For that creamy coconut element of a pina colada, I used coconut cream. For the coconut cream, chill a can of full fat coconut milk overnight in the fridge. When you are ready to make the drink, scoop out the solid coconut cream at the top.
This easy drink is perfect for taking to a picnic or to the beach. If you are in the mood for a little extra kick, rum would be great in this drink.

Pina Colada Agua Fresca
A refreshing beverage perfect for a warm, sunny day! If your pineapple is sweet enough, you don't even need to add any sugar!
Ingredients
- I Full Fat Can Coconut Milk {I used Trader Joe's Brand}
- 1 Medium Pineapple, peeled and chopped
- 4 Cups Water, divided
- Agave Nectar, if needed
Instructions
- The day before you want to make the drink, place the can of coocnut milk in the fridge. This will help to separate the cream from the liquid.
- When ready to make the drink, open the can of chilled coconut milk and scoop out the cream part only. Add to a blender.
- Peel and dice the pineapple into chunks. Add the chopped pineapple to the blender. Pour 2 cups of the water in the blender and blend until the pineapple is pureed.
- Pour into a picher and add the remaining water. The drink will be on the thicker side; if you prefer a thinner drink simply add a little more water.
- Taste and see if it needs any added sugar. If it does, add agave nectar to taste.
- Serve over ice and enjoy.
- If not serving right away, store in the fridge until ready to serve.
Notes
Prep time doesn't included chilling the coconut milk.

Is the scooped out coconut to be added to the blender, or discarded off? Please explain

Only the coconut cream at the top of the can is needed. Simply scope the cream that has separated from the coconut milk and add that to the blender. Hope this helps!
