Easy Asparagus and Black Bean Tacos are the perfect taco for spring!
It's finally asparagus season! I wait all year for asparagus to arrive at my local farmers market. After a long winter, it is just so exciting to see a fresh local vegetable at the market.
These Easy Asparagus and Black Bean Tacos are a simple and quick dinner recipe.
I wanted to keep these tacos fairly simple to highlight the asparagus. These tacos takes less than 30 minutes to make. Perfect for a busy weeknight meal.
The recipe is so simple. It starts by sautéing some onion, jalapeno, asparagus. Then a can of black beans is added to the mix. That's it! These tacos couldn't be any easier!
I like to serve these tacos with a simple avocado spread. I kept it pretty thick, but you could make it a little thinner if you'd like. The creaminess of the avocado is perfect with the asparagus.

Easy Asparagus and Black Bean Tacos are the perfect taco for spring! Perfect for Taco Tuesday!
Ingredients
- 1 Tablespoon Avocado Oil
- ¼ White Onion, diced
- 1 Small Jalapeno, minced {seeds removed for less heat}
- 1 Pound Asparagus, ends trimmed and cut into 1 ½-2 inch pieces
- 1 15-ounce Can Black Beans, drained and rinsed
- Salt and Pepper, to taste
For the Avocado Spread:
- 2 Avocados
- Juice of 1 Lime
- ½ Cup Cilantro, chopped
- 2-3 Tablespoons Water, plus more if needed
- ½ teaspoon Salt
For Serving:
- Tortillas, warmed
Instructions
- In a large saute pan, heat the oil over medium hight heat. Add the onion and cook 3-5 minutes, until softened.
- Add the jalapeno and asparagus; stir. Cook 5-7 minutes, just until the asparagus in tender.
- Add the the black beans and cook for 1-2 minutes, just to heat the beans. Season with salt and pepper.
- While the asparagus is cooking, make the avocado spread. In a food processor, add the avocados, lime juice, cilantro, water, and salt. Process until smooth. Add more water to thin out the dip. Taste and add more lime juice or salt if needed.
Serve the tacos
- Warm the tortillas and serve alongside the asparagus and bean filling. Top with the avocado spread.
