Easy Asparagus and Black Bean Tacos are the perfect taco for spring!
It’s finally asparagus season! I wait all year for asparagus to arrive at my local farmers market. After a long winter, it is just so exciting to see a fresh local vegetable at the market.
These Easy Asparagus and Black Bean Tacos are a simple and quick dinner recipe. I wanted to keep these tacos fairly simple to highlight the asparagus. These tacos takes less than 30 minutes to make. Perfect for a busy weeknight meal.
The recipe is so simple. It starts by sautéing some onion, jalapeno, asparagus. Then a can of black beans is added to the mix. That’s it! These tacos couldn’t be any easier!
I like to serve these tacos with a simple avocado spread. I kept it pretty thick, but you could make it a little thinner if you’d like. The creaminess of the avocado is perfect with the asparagus.
