what you need to make chocolate peanut butter cookies:
- Semi-Sweet Chocolate Chips- for a dairy-free cookie, use vegan-friendly chocolate chips
- Peanut Butter- I've made these with all natural peanut butter, but I think that using regular creamy peanut butter is much better for this recipe
- Ritz Crackers- Did you know that ritz crackers are vegan? These crisp crackers are the base of the cookies
- Flaked Salt- After the peanut butter cookies are dipped in chocolate, sprinkle a little bit of flaked salt on top. If you can't find flaked salt at your local store, you can order it online. I order mine from Amazon.
how to make the peanut butter cookies:
First, melt the chocolate. You can melt the chocolate using a double broiler or in the microwave.
Place about ½ teaspoons of peanut butter on 12 of the crackers. Top those crackers with the remaining ones, creating a sandwich.
Dip each sandwich into the chocolate, coating it completely and letting the excess run off.
Sprinkle the chocolate covered crackers with flaked salt.
Place in the fridge for these to harden for about an hour.
how to store the cookies:
You can store them at room temperature, but I prefer to refrigerate them. They are so good cold!
For longer storage, you can also store the peanut butter chocolate crackers in the freezer.

These Chocolate Peanut Butter Ritz Cookies are perfect for a sweet treat or dessert. If you aren't a baker, this is a great easy dessert recipe to make for parties and the holidays.
Ingredients
- 24 Ritz Crackers
- 1 ½ Cups Semi-Sweet Chocolate Chips, dairy-free if needed
- ½ Cup Creamy Peanut Butter
- Flaked Salt
Instructions
- Line a baking sheet with parchment paper. Place the ritz crackers in a single layer.
- Melt the chocolate chips. In a microwave safe bowl, cook in 30 second increments, stirring after each, until melted. You can also melt the chocolate chips in a double broiler.
- Let the melted chocolate cool slightly while you make the peanut butter cracker sandwiches.
- Place about 1 ½ teaspoons of peanut butter on 12 of the crackers. Cover those crackers with the remaining ones, creating a sandwich.
- Dip each assembled sandwich into the chocolate, coating it completely and letting the excess run off. I like to use two forks to dip the cookie sandwiches.
- Place the sandwich back on the parchment lined cookie sheet and sprinkle with flaked salt. Repeat with remaining cracker sandwiches.
- Place in the fridge for an hour or until the chocolate has set.
