These Rhubarb Beer Margaritas aka Rhubaritas are the perfect summer drink. They are slightly sweet and very refreshing!
Happy Friday!! We made it to the weekend and I'm celebrating with a Rhubarb Beer Margarita, one of my new favorite drinks. I have been intrigued by the idea of combining a margarita with beer for awhile and finally gave it a try. I only wish that I had tried it sooner!
Since rhubarb is now in season, I wanted to make a rhubarb based beer margarita. This drink starts off by making a rhubarb simple syrup. It's really easy to make and can be made in advance. I like to make it the day before I want to have a Rhubarb Beer Margaritas. This gives the syrup time to cool before serving.
I recently came across an article on Craftbeer.com that talked about the history of Mexican lagers. The Grandes Lagos beer from Great Lakes Brewing Company grabbed my attention right away. Grandes Lagos is a Mexican-style lager brewed with hibiscus flowers. The beer is slightly tart with sweet floral aromas and the beer pours a soft pink color. When I read the description of the beer, I knew that is would be perfect with the rhubarb simple syrup.
The floral hibiscus notes of the beer pairs beautifully with the rhubarb. If you can find Grandes Lagos, I highly recommend using it for the recipe. If you can't located it near you, use your favorite Mexican lager.
For this recipe, the proportions are for one drink. I prefer to make this drink individually rather than making one big pitcher to serve. The rhubarb simple syrup makes about 2 cups, which is enough for 8 margaritas. The simple syrup will keep in the fridge for a week or two.
This beer margarita is just too good. And how gorgeous is that color? The combination of the vibrant pink of the rhubarb simple syrup and the soft pink color of the beer makes for a stunning pink drink!
Rhubarb Beer Margaritas
These Rhubarb Beer Margaritas aka Rhubaritas are the perfect summer drink. They are slightly sweet and very refreshing!
Ingredients
For the Rhubarb Simple Syrup:
- 4 Cup Rhubarb, chopped
- 1 Cup Sugar
- 1 Cup Water
For One Margarita:
- Lime Wedge and Sea Salt for rimming the glasses, optional
- ¼ Cup of the Rhubarb Simple Syrup
- 2 Ounces Silver Tequila
- 1 Ounce Lime Juice
- Mexican Larger {I highly recommend Grandes Lagos from Great Lakes Brewing Company}
Instructions
For the Rhubarb Simple Syrup:
- In a heavy pot or dutch oven, add the rhubarb, sugar and water. Bring to a boil over medium high heat. Once boiling, reduce heat to low, Cook until the rhubarb is soft, about 20-25 minutes.
- Use a fine mesh sieve to strain the mixture into a bowl, using the back of a spoon to press out all the liquid. Transfer to an airtight container.
- Store in the refrigerator until ready to use.
For One Margarita:
- Create the salt rim if using. Add some salt on a plate. Moisten the rims the glass with a lime juice and carefully run the rim in the salt
- Combine the rhubarb simple syrup, tequila, and lime juice in the margarita glass. Stir. Fill the glass with ice and then top with a Mexican lager.
