For these Easy Vegan Veggie Wraps with Chipotle Dressing, I like to use whole wheat tortillas for the wrap.
The chipotle dressing is probably my favorite thing about the wraps. I love chipotle peppers and add them in just about any recipe that I can. The chipotles add a really nice smokiness to the wraps.
To keep things healthy, I use an unsweetened plain vegan yogurt. Even though I love vegan mayo based dressings, sometimes I prefer to keep things on the healthier side. Vegan yogurt makes a great base for dressings.

To make the wraps, first start by laying the tortilla on a flat surface. Spread about 1 tablespoon of the chipotle dressing in the middle of the wrap. Next, add some lettuce to the wrap.
I like to add some crunchy vegetables to the wraps. My favorite are shredded carrots and sliced red bell peppers.
I think everything is better with avocado, including these veggie wraps! The creaminess of the avocado adds another texture element to the wrap.
For some added freshness, I like to add some fresh cilantro. The cilantro really helps to brighten up the wraps.
Lastly, I like to drizzle a little bit more of the chipotle dressing.

- In a small bowl, add the vegan yogurt, chipotle pepper, maple syrup, and salt to taste. Stir to combine. Taste and adjust seasonings if needed.
