I am always looking for new ways to cook up potatoes. I usually have a wide assortment of them on hand: sweet potatoes, yukon gold, and russet potatoes are definitely staples in our family. The other day I bought a 10 pound back of local Michigan russet potatoes. Yes. This is probably way too many potatoes, but that is ok with us.
I usually roast, bake or mash the potatoes. This time I wanted to change things up. I remembered when I was growing up my Mom went through a phase of roasted potato, peppers, and onion in these tinfoil packets. If I remember correctly, tinfoil packets just came onto the market. Is that what they where called? Do they even still sell those? I can't remember, but they were intended for foil packet cooking. For a few Summers in a row, it seemed like my Mom would always be cooking potatoes in foil. They where a perfect side dish to any Summer meal.
Just some regular good old tinfoil is needed to created these cute little packets. Simply tear off square sheets of foil. Put the cut potatoes, onion, green bell peppers onto the sheet. Everything gets seasoned with salt, pepper, and a little touch of smoked paprika. A little vegan butter {Earth Balance} goes on top. You don't need too much butter; just a little bit will get the job done.
These Potato Packets took me back to those Summers. The potatoes get nice and tender, while the onion and green pepper get soft and sweet. These packets don't require much effort to make. Just chopping everything up and then assembling them. The oven and packets do all the work. A very easy side dish for dinner.
Potato Packets
Ingredients
- 4 Russet Potatoes, scrubbed and cleaned
- ½ Medium Yellow Onion, diced
- ½ Green Bell Pepper, diced
- 3-4 Tablespoons Earth Balance Vegan Butter, cut into medium pieces
- Salt to taste
- Freshly Ground Black Pepper to taste
- Smoked Paprika
- 2-3 Tablespoons Parsley, minced
Instructions
- Preheat the oven to 375 F.
- Roughly chop the potatoes into chunks. Divided the potatoes into four portions and place each portion onto each tinfoil square. Season with salt and pepper to taste. Sprinkle a touch of smoked paprika on top. Then add a little bit of the Earth Balance to each packet. Finally sprinkle with the minced parsley.
- Wrap the packets tightly closed. Bake for 45 minutes, or until the potatoes are nice and tender.
- Serve right in the packet!
