Coleslaw Ingredients
For this coleslaw recipe you'll only need a few ingredients. This is what you will need to make the coleslaw with crunchy noddles:
Coleslaw Mix- You'll need two bags of pre-packed coleslaw mix. Using a store-bought coleslaw mix saves a lot of prep time.
Rice Noodles- The crunchy rice noodles are the star of the the coleslaw. The rice noodles might be hard to find depending on where you live. I have found them at my local Meijer. They are available online as well.
Sesame Seeds- Toasting the sesame seeds before adding to the coleslaw adds a nutty flavor to the salad. Toasting helps to bright out the. natural flavor of the seeds.
Almonds- Like the sesame seeds, I like to toast the slivered almonds in the oven.
The Dressing
The base of the dressing is vegetable oil. I prefer to use avocado oil, but you can use any neutral vegetable oil.
White vinegar adds a nice acidity to the dressing and helps to balance out the flavors.
This coleslaw dressing does need sugar. I have tried to make the dressing with less sugar and it just doesn't taste the same.
The flavors of the dressing really compliment the coleslaw ingredients.

Crunchy Coleslaw

Ingredients
- 2 Bags Coleslaw Mix
- 1 Container La Choy Rice Noodles
- ¼ Cup Roasted Slivered Almonds*
- 2 Tablespoons Roasted Sesame Seeds*
Dressing
- 1 Cup Neutral Oil, I use Avocado
- ⅓ Cup White Vinegar
- ¾ Cup Sugar
- 2 Teaspoons Salt
- 1 Teaspoon Pepper
Instructions
- In a large mixing bowl add the coleslaw mix, rice noodles, toasted almonds and sesame seeds. Toss together.
- For the dressing, whisk together the oil, vinegar, sugar, salt and pepper until emulsified.
- Pour the dressing over the coleslaw and toss together until the dressing has been evenly distributed.
- Serve immediately.
Notes
To toast the almonds and sesame seeds, preheat the oven to 350 F. Roast on a small baking sheet for 7-10 minutes until toasted.
