One of my favorite pantry staples are cans of chipotle peppers in adobo sauce. Every time I go to the Mexican Supermecado, I always add a can or two into my cart. If you aren’t familiar with chipotle peppers in adobo, they are jalapeño peppers that have been smoked and pickled. The result are these flavorful chiles that are layered with flavors: sweet, smoky, and spicy. They are a great pantry staple to have on hand because you can add them to tacos, tamales, vegetables, and mashed potatoes of course!
I adore sweet potatoes so much and since I am always trying to find new ways to use the chipotles in adobo, I figured why not combine two of my favorite ingredients. These Chipotle Mashed Sweet Potatoes are sweet, smoky, and have a nice kick to them.
I only added one chipotle pepper; if you love things really spicy you can always add in another pepper. If you don’t really like things too spicy, remove the seeds from the pepper. You can always add more chipotle peppers to the potatoes. I have learned this the hard way by adding too many chipotles peppers in at the beginning! You also add a little bit of the adobo sauce from the can; this really adds so much flavor to these potatoes.
This would also make an amazing side dish option for your Holiday dinners.
Chipotle Mashed Sweet Potatoes
Chipotles peppers give mashed sweet potatoes are smoky flavor with a little bit of a spicy kick!
Ingredients
- 2 Large Sweet Potatoes
- 2 Tablespoons Refined Coconut Oil, softened
- 1 Chipotle Pepper in Adobo {seeded for less heat}
- 1 teaspoon Sauce from Chipotles in Adobo, or to taste
- Small Pinch Cinnamon
- ¼-½ teaspoon Salt, or to taste
- Pepper to Taste
Instructions
- Heat the oven to 375 degrees. Place the sweet potatoes on a cookie sheet and bake for 45 minutes to 1 hour. If the sweet potato is extra large, it might take over 1 hour.
- Scoop out the sweet potato flesh and add to a mixing bowl. Add in the rest of the ingredients. Remember to start with one chipotle pepper, and you can always add in more it make it really spicy.
- Mix together the ingredients with a hand mixer until light and fluffy.
- Taste and adjust seasonings to your liking.
