When I first heard that Earth Balance was coming out with a boxed Vegan Mac and Cheese, I was ecstatic. I grew up eating the classic blue box mac and cheese. I probably ate it a little too often, but it was a staple part of my childhood. I was excited to see how the Earth Balance Mac and Cheese compared to that iconic Kraft Mac and Cheese.
It took me awhile to actually purchase the Earth Balance Mac and Cheese. My local Whole Foods was out of it every time I went. Then I left for Mexico City and I wasn’t able to try it before I left. Since I am now back in Michigan for a few weeks, I knew that I had to find it. Whole Foods actually had it in stock and it was on sale for 2 for $5! I picked up a few boxes to try.
I followed the directions from the back of the box. From what I remember, it is just like the Kraft Mac and Cheese. You boil water, cook the pasta for about 10 minutes, drain and then add Earth Balance Butter, milk, and the cheese packet. So quick & easy.
The verdict: I loved it. It isn’t something that I would eat often because it isn’t the healthiest; however, I believe that every once in awhile you can have a treat like this Mac and Cheese.
It was cheesy, sharp, salty, and very tasty. It might be a little too salty for some. I do think box has two decent sized servings. I haven’t tried the white cheddar version yet. I am not a huge fan of white cheddar, so I only picked up the cheddar version. I do plan on trying the white cheddar version soon.
It is pure comfort. Perfect for this bitter cold weather that we are having here in the Midwest.
I can’t wait for my husband to try this. This is right up Hector’s alley. The best part is that it is so fast and easy to make; anyone can make this.
I served it with roasted broccoli. I really love the broccoli and mac and cheese combination. Peas would also be a great way to add a few veggies into the mac and cheese.
I hope that they will add a gluten-free option for those who can eat the regular pasta.
Overall I really enjoyed the Earth Balance Mac and Cheese. It brought me right back to my childhood. I would highly recommend giving it a try.
