Strawberry Prickly Pear Agua Fresca

A light and refreshing fruit beverage that is perfect for enjoying on a sunny day. Using frozen strawberries is a great option when local strawberries aren't in season.

  • 5 Prickly Pears
  • 3 Cups Frozen Strawberries
  • ¼ Cup Lime Juice
  • 4 Cups Cold Water, divided
  • ½ Cup-1 Cup Organic Cane Sugar
  • Ice Cubs for serving
  1. Carefully using a pairing knife, remove the peel from the prickly pears. Roughly chop them and add a blender.
  2. Add the strawberries, lime juice and 2 cups of the water to the blender. Blend until smooth.
  3. Carefully use a fine mesh strainer to strain the agua fresca into a pitcher. Straining removes the seeds from the prickly pears.
  4. Pour in the remaining 2 cups of cold water and stir in the sugar. Start with ½ cup sugar and taste. Add more sugar if you prefer a sweeter drink.
  5. Stir and serve over ice.
