I hope that you are as excited as I am for this Margarita Salad with Tequila Lime Dressing.
For our wedding, Hector’s Aunt gave each family two bottles of tequila. It was so sweet and thoughtful for her to do that. Since we got back home, I have been trying to figure out ways to use up some of the tequila. Why not use the tequila in a salad dressing?!
Tequila doesn’t just have be just for margaritas! I think this dressing would be great for a girl’s night or maybe for a summer party. And of course, we can’t forget Cinco De Mayo.
This dressing is tart from the lime juice with a little hint of tequila. If you want a really strong margarita dressing, I suggest using 1 1/2 -2 tablespoons of tequila instead of one. The dressing tastes even better the next day. For the salad base, I used leafy greens, sliced strawberries, toasted almonds, and diced avocado. You could used whatever fruits and nuts that you like!

For the dressing:
1/4 cup freshly squeezed lime juice
1 tsp lime zest
1 tablespoon tequila
1 tablespoon agave
1/4-1/2 tsp salt
1/4 cup olive oil
In a glass jar, add the lime juice, lime zest, tequila, agave, and salt. Whisk together. Continue whisking and add in the olive oil. Whisk until the dressing has emulsified. You can also close the lid and give the dressing a big shake to combine everything together. Taste and adjust to your liking. You can serve right away or store in the fridge for a couple hours before serving. The flavors really come together after sitting in the fridge for a few hours. Just make sure to give the jar a good shake before using. The oil will separate pretty quickly.

Toasted Slivered Almonds
In a salad bowl/serving bowl, add the leafy greens. Drizzle your desired amount of the dressing and lightly toss. Add the strawberries, almonds, avocado and gently toss.
